Chef Folse's Roasted Garlic and Shrimp Tossed Pasta

Garlic is the perfect vegetable seasoning for any dish. Roasted garlic and pasta enhance this grilled shrimp salad for a unique flavor.


1 large head garlic

1 pound (21–26 count) shrimp, peeled and deveined

1 pound orecchiette or bowtie pasta, cooked

¼ cup olive oil, divided

3 tbsps softened butter

½ cup diced onions

¼ cup (½-inch diced) green bell pepper

¼ cup (½-inch diced) red bell pepper

¼ cup (½-inch diced) yellow bell pepper

¼ cup minced tasso

1 pint mixed colored cherry tomatoes, halved

2 tbsps lemon juice

¼ cup chopped chives

salt and freshly ground black pepper to taste

granulated garlic to taste

½ cup shredded Asiago or Parmesan cheese


Place cooked pasta in a large bowl and set aside. Preheat a gas or charcoal grill to medium heat. Using a sharp paring knife, trim ½ inch from top of garlic to expose pods. Place garlic head in center of a 6" x 6" piece of aluminum foil and drizzle with 1 tablespoon olive oil. Wrap foil tightly to completely enclose garlic. Place foil packet on grill over a drip pan and cook 1 hour or until tender. 15 minutes prior to garlic is done, thread shrimp onto long metal skewers. Brush shrimp with 1 tablespoon olive oil then place on grill 2–3 minutes. Remove shrimp from fire and allow to cool. Set aside. Once garlic is cooked, remove from grill and set aside. In a medium skillet over medium-high heat, melt butter in remaining olive oil. Add onions, bell peppers and tasso then sauté 5–7 minutes or until vegetables are wilted, stirring occasionally. Add tomatoes to skillet then cook 2–3 additional minutes, stirring to combine. Carefully remove garlic from foil and squeeze pulp into skillet, stirring into vegetable mixture. Remove shrimp from skewers and add to skillet. Add lemon juice and chives then season to taste with salt, pepper and granulated garlic. Pour shrimp and garlic mixture over pasta, tossing to coat well. Adjust seasonings to taste and garnish with shredded cheese. Serve immediately.
