Breakfast Tacos from Mestizo

3 large eggs

2 oz. Chorizo

1 oz. Olive Oil

3 Flour or Corn Torillas

1 oz. chipotle salsa

3 slices of avacado

2 oz. diced cilantro

2 oz. pico de gallo

1 oz. cotija cheese

Heat pan with olive oil and then add chipotle, salsa and chorizo.  Stir for about 30 seconds til chorizo separates and then add three scrambled eggs.  Cook till fully scrambled and turn off heat.  Heat up tortillas and then layer with eggs, then layer the cilantro, sliced avacado, pico de gallo and cotija cheese and serve.
