Rack of Lamb from Little Village

1 French Rack of Lamb coated with olive oil, salt and cracked black pepper
Grilled to your preference
1 cup of Bourbon
1/2 cup cane syrup
1/2 cup Worcestershire sauce
1 cup demi glace
PROCEDURE for Sauce:

  • Flame off Bourbon and add the cane syrup and Worcestershire sauce. 
  • Reduced by half
  • Add demi glace and serve
