INGREDIENTS
1 cup of brown sugar, packed
1/2 cup of flour
1 cup of chopped pecans
2/3 cup butter (not margarine) melted
2 eggs, slightly beaten
PROCEDURE
Preheat oven to 350 degrees. Combine brown sugar, flour and pecans. Stir in eggs and melted butter until flour mixture is moistened. Spray mini muffin tin with cooking spray. Fill each muffin tin about 3/4 full. Bake for 20-25 minutes. Yield 24 muffins.
