This simple-to-make recipe combines two popular desserts in one. Use red and yellow food coloring to make orange for Halloween!
Makes 4 dozen squares
INGREDIENTS
1 (18.25-ounce) box German chocolate cake mix
1 egg
1/3 cup flaked coconut
1/3 cup butter, melted
1 (8-ounce) package reduced-fat cream cheese
1 (16-ounce) box confectioners sugar
3 egg whites
1 teaspoon coconut extract
1 teaspoon vanilla extract
PROCEDURE
- Preheat oven to 350°F. Coat a 13 × 9 × 2-inch baking pan with nonstick cooking spray.
- In a large bowl, combine cake mix, egg, coconut, and butter. Press into the bottom of prepared pan.
- In a mixing bowl, beat all remaining ingredients until mixture is smooth and creamy. Pour over mixture in pan.
- Bake for 35-40 minutes or until top is golden brown. Cool and cut into squares.
