INGREDIENTS for Bourbon and Pecan Glaze
3/4 Cup of toasted Pecan pieces (Toast Pecans for 2 mins. With salt, sugar and butter) 2 Tbs. Worcestshire Sauce 3/4 Cup Dijon Mustard 1 Cup Brown Sugar 1 Cup Heavy Cream 1/2 Cup Bourbon Whiskey 2 oz. Butter
PROCEDURE: Flame/reduce whiskey for about 2 mins., Take from heat and add all ingredients except Butter. Simmer for about 10 mins., Take from heat for 5 mins., then gradually stir in Butter.
INGREDIENTS for Roasted Autumn Squash
1 Butternut Squash or Pumpkin, peeled, seeded, and cut into chunks. Cinnamon Nutmeg Butter, melted Garlic Salt/pepper
PROCEDURE: Preheat oven to 375 degrees. Mix all ingredients in a bowl, lay out on greased baking tray and bake for 30/40 mins.
When Squash is soft, Bring the oven to broil to achieve golden brown color (2-3 mins.)
Serve with the Grilled Chicken along with roast garlic mashed potatoes or wild rice
