INGREDIENTS

1 and 3/4 cups sifted flour
3 eggs, slightly beaten
3/4 cup milk
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 dash cayenne
1 teaspoon fresh basil, chopped
1 teaspoon fresh oregano, chopped
1 teaspoon parsley, shopped
METHOD
In a mixing bowl, add eggs to flour, salt, cayenne, and nutmeg. Work in well and stir in milk to make a smooth, thick batter. Place large saucepan of salted water on high heat, when boiling, use a rubber spatula to push batter through a colander into water. Stir spaetzle and allow to cook for 2-3 minutes. Rinse under cold water. When ready to serve, warm spaetzle in sauté pan with butter and sprinkle with fresh herbs.
