Seared Wasabi Pea Crusted Tuna On Micro Green with a Pan Asian Dressing

INGREDIENTS for Dressing

2 oz Rice wine Vinegar
2.5 oz olive oil
1 Tbsp Dijon Mustard
2 Tbsp Chili paste
1/4 Tsp sesame oil
1/4 Tsp cayenne
1/4 white pepper
1/8 Tsp Salt
1/4 Lemon juice


  • Combine all ingredients together and mix well.
  • Chill for 1 hour.
  • Drizzle over salad and enjoy

The Recipe makes 5oz


20 oz Tuna
1 Tbsp of sesame oil
6 oz of wasabi peas
1 Tbsp of Vegetable oil
Kosher salt to taste
Fresh cracked pepper to taste

  • Rub Tuna in sesame Oil.
  • Sprinkle with salt and pepper.
  • Roll tuna in crushed wasabi peas.
  • Sear Tuna no longer then 1 min on each side
  • Take out of pan and place in cooler for 1 hour.
  • Take out and slice thin and place 2 oz of tuna on the salad, or as desired
  • Garnish with Purple orchids and Red, Yellow, orange bell peppers.
