Chipotle Honey Glazed Bacon Wrapped Shrimp Set on a Nectarine Pico de Gallo (see below)
1 8 inch skewer
5 16/20 shrimp
5 pc Apple Smoked Bacon
1 TBSP Chipotle Puree
1 TBSP Honey
1/2 tsp black pepper
1/2 tsp Kosher salt
Peel shrimp to the tail. Season with Black Pepper. Wrap with bacon & put on bamboo skewers. Place saute pan on medium heat. Once pan is hot, place shrimp into pan. Sear on both sides until bacon is crispy. Brush on Chipotle puree & honey. Place in oven for 5 minutes on 350 degrees.
Nectarine Pico de Gallo
1/2 cup diced nectarines
1/4 cup diced white onion
1/4 cup diced Roma tomatoes
1 TBSP chopped cilantro
2 TBSP Nectarine juice
1/2 tsp chopped green onion
1/4 tsp cumin
1/4 tsp kosher salt
In a mixing bowl add all ingredients and mix well.
Assembly- Place Pico de Gallo on base of the plate and set shrimp on top. Garnish with fresh cilantro.
