INGREDIENTS
1 onion, sliced
2 tomatoes, sliced
2 serrano chilli peppers, thinly sliced, deveined, deseeded
2 garlic cloves diced
the juice of half a lime
1 teaspoon of salt
2 fresh fish filets, your choice - the classic recipe calls for Red Snapper
3 cups of Japanese bread crumbs
2 eggs
1 cup of flour
2 cups of olive oil.
PROCEDURE
- Bread fish using the eggs, flour and bread crumbs.
- Fry the fish in 12" teflon coded skillet.
- Take the fish out and place it on a plate.
- In the same pan cook the onions and chile peppers for 2-3 minutes, add the tomatoes and garlic, saute for 2 additional minutes
- add the juice of a lime, salt to taste, then pour the sauce over the fish
- Garnish and serve with rice
