1 pizza dough or 1 store bought pizza crust 1/2 cup cornmeal 2 tbsp olive oil 3 cloves garlic, minced 2 cups spinach 1 cup shredded mozzarella cheese 1 cup sliced button mushrooms 2 cups large shrimp, peeled and boiled 1/4 cup feta cheese 2 tbsp garlic butter 3 tbsp grated parmesan cheese Cajun seasoning to taste
Pre-Heat oven to 500 degrees F. Place stone in hot oven & allow it to heat up. Sprinkle a handful of cornmeal onto your pizza peel. Place either your pizza dough (already tossed out) or your store bought pizza crust on the center of the peel. Drizzle olive oil evenly over the base of your pie. Sprinkle minced garlic over the olive oil. Spread the spinach over the pie pinching off stems as you go. Spread mozzarella cheese over the spinach - be sure to cover the edges well. Place the rest of the topping around the pie taking care to spread the ingredients evenly. Use the peel to place your pizza on the hot stone. Allow the pizza to cook 10 - 15 minutes until the crust is golden brown (if using a store bought crust be sure to consult the specific cooking times for that product. Once the crust is golden brown use your peel to remove it from the oven. Brush the crust liberally with garlic butter and dust with parmesan cheese. Cut the pizza in six to eight slices & enjoy.
