Belle River Oatmeal Cake from April Powell

INGREDIENTS

1 1/2 cups water
1 cup regular oatmeal
1 cup brown sugar
1 cup white sugar
1/2 cup salad oil
2 eggs
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1 1/2 cups flower

Topping

1 stick unsalted butter
1 cup brown sugar
1/4 cup pet milk
1 cup chopped pecans
1 cup coconut
1 tsp vanilla

PROCEDURE

  • combine water and oatmeal and let stand for 10 minutes
  • mix well together 1 cup brown sugar, 1 cup white sugar, 1/2 cup salad oil and 2 eggs
  • in a seperate bowl sift together 1 tsp baking soda,1 tsp cinnamon, 1/2 tsp salt and 1 1/2 cups flower
  • combine oatmeal, wet ingredients, and dry ingredients alternating bowls
  • bake for 30 minutes at 350 in a well buttered 9x12 pan
  • melt stick of butter, 1 cup brown sugar
  • then add 1/4 cup pet milk, 1 cup chopped pecans, 1 cup coconut, and 1 tsp vanilla
  • mix well together and spread over hot cake
  • put under broiler  watch closly for 2-3 minutes until golden brown
  • let stand for 5 minutes, serve and enjoy!
