INGREDIENTS
1 case tortellini, cheese pasta, boiled in salt water
5# box 36/40 peeled shrimp, boiled (season water with crab boil, salt, lemon juice)
4 c. olive salad mix
3 c. grape tomatoes cut in 1/2
1/2 red onion, minced
1/4 cup chopped parsley
3 tbsp dried Italian seasoning
1 2/4 quart sensation dressing (recipe follows)
Sensation Dressing
8-10 garlic cloves, peeled
1 Bottle 32 oz. lemon juice
1 bunch parsley, chopped rough
1 bunch green onion, chopped rough
4 tbsp honey
3 tbsp Dijon mustard
4 cups mayo
3 cups olive oil
Salt / pepper to taste
PROCEDURE
- In food processor add garlic, parsley, green onion & 1 cup lemon juice.
- Blend until pureed. Remove from processor into quart container. Rinse processor bowl with remaining juice and add to quart container. Add remaining ingredients. Use Bur mixer to emulsify. Adjust seasoning as needed.
- In a large mixing bowl, add pasta, shrimp, olive salad, tomatoes, onion, parsley, Italian spice and Sensation dressing. Toss well and add additional dressing / seasoning if needed.
