INGREDIENTS
1 lb. raw shrimp, pureed in food processor
1/3 cup finely chopped onion
3 Tbsp. red bell pepper, finely diced
3 Tbsp. celery, finely diced
3 Tbsp. green onion, finely diced
3 Tbsp. parsley, finely diced
2 Tbsp. garlic, finely diced
1 egg
1 cup panko bread crumbs
1 tsp. salt
1 tsp. cayenne
1 tsp. creole mustard
3/4 tsp. baking powder
Flour for dredging
Oil for frying
PROCEDURE: Combine all ingredients excluding flour and oil. Form into patties and lightly dredge in flour. Fry in oil for 3-4 minutes per side.
