Buffalo Meatballs from Ricky Pampo


1 pound ground buffalo
1 cup chopped onions, minced garlic, parsley
2 eggs (1whole, 1 egg white)
1 Tbsp Ms. dash chipotle seasoning blend
1 Tbsp saltfree all purpose seasoning
1 tsp. black pepper


  • Combine and mix above ingredients in bowl.
  • Portion golf ball size meatballs and place in separate bowl.
  • Pan sear meatballs in skillet til lightly brown.
  • Transfer meatballs into pre-made red sauce and simmer for 10- 15 mins.
  • Serve over angel hair pasta.
