INGREDIENTS
1 to 1 and 1/2 pound beef tenderloin
3 to 4 oz Blue cheese ( gorgonzola maybe used also) Room temperature
2 to 3 oz chopped Walnuts ( pecans maybe used also)
Black Pepper
Salt
Olive oil
Kitchen string
PROCEDURE
- Preheat oven to 400 degrees F
- Being careful not to slice all the way through the meat, need to make a lengthwise slice in middle of meat to make a pocket
- Mix together Cheese and Nuts, stuff into meat pocket. Tie the whole thing together with kitchen string.
- Rub with olive oil, then salt and pepper all sides
- In a saute pan, over medium high heat, sear meat on all sides. Place into oven proof roasting pan. Place into oven. Check internal temperature with meat thermometer after 20-25 minutes, temperature should read 125 degrees, for rare. Medium rare, 140 degrees, pink inside.
- Remove from oven and allow to rest a few minutes before slicing.
