INGREDIENTS
1 lb saltfish (cod fish)
24 ackees (or 2 tins canned ackees)
1 large onion, chopped
1 medium tomato, chopped
2 stalks escallion, shopped
1 tbsp veg oil
Shakin Jamaican Spice Blend to taste
PROCEDURE
- Soak codfish (saltfish) overnight. Remove skin when soaking, because the skin has lots of salt;alternately soak for 30-40 minutes
- Place in fresh cold water, bring to a boil, drain and repeat.
- Flake fish and set aside
- Prepare ackees for cooking by removing seeds and boil for 20 minutes in salt water, then drain
- If you are using canned ackees just rain and stir into saute mixture.
- Saute onion, escallion and tomatoes. Add salt and black pepper and ackee and saute for approximately 5 minutes
- Add flaked saltfish to mixture, saute briefly for flavors to blend
- Serve hot with Johnny Cakes or boiled green bananas
