Corn Casserole from Dinners Being Delivered


4 cups frozen or canned corn
2 cans Larscu's veg all, drain one can only
1 cup mayonnaise
1 cup chopped Velveeta cubes
1 med. onion, chopped
4 tsps butter
1 tube of Ritz crackers
8-10 pats of butter


  • in a small saucepan, melt butter
  • add onions and saute until transparent. Set aside
  • in a 9 x 13 pan, combine corn, vegall, mayonnaise, Velveeta, and onions.Mix thoroughly
  • Crush Ritz crackers over corn mixture
  • place pats of butter randomly on cracker topping
  • bake in 350 degree oven for 25-30 minutes.
