Smothered Chicken from LaGranges

INGREDIENTS

8 oz chicken breast
3-5 oz sauteed onions
3-4 strips smoked bacon (chopped)
2 oz BBQ sauce
3 oz shredded cheddar/Monterrey jack
Cajun Seasoning
Lea & Perrin's

PROCEDURE

  • Season chicken breast with Cajun seasoning; marinate 2-3 hours
  • Coat pan with olive oil. Sautee or grill chicken breast until done
  • In another skillet, start toppings: fry bacon and place on the side to cool; add olive oil and sautee onions, when onions are almost done, add Lea & Perrin's
  • While onions are cooking, chop bacon
  • Place chicken breast on a plate or in a skillet and top with BBQ sauce
  • Add a layer of chopped bacon and sauteed onions and top with shredded cheese.
  • Place in oven at 350 degrees until cheese melts.
