INGREDIENTS
8 oz chicken breast
3-5 oz sauteed onions
3-4 strips smoked bacon (chopped)
2 oz BBQ sauce
3 oz shredded cheddar/Monterrey jack
Cajun Seasoning
Lea & Perrin's
PROCEDURE
- Season chicken breast with Cajun seasoning; marinate 2-3 hours
- Coat pan with olive oil. Sautee or grill chicken breast until done
- In another skillet, start toppings: fry bacon and place on the side to cool; add olive oil and sautee onions, when onions are almost done, add Lea & Perrin's
- While onions are cooking, chop bacon
- Place chicken breast on a plate or in a skillet and top with BBQ sauce
- Add a layer of chopped bacon and sauteed onions and top with shredded cheese.
- Place in oven at 350 degrees until cheese melts.
