Texas Brag Chili from Roux House


2 lb ground meat (beef)
1 small onion
2 jalapeno pepeprs, choppd
2 cloves garlic, finely chopped
1 Tbsp. salt
1 Tbsp. paprika
1 Tbsp. cumin powder
2 heaping tsp. chili powder
1 tsp. ground black pepper
1 8 oz. can tomato sauce
16 oz. water
8 oz. beer
2 tbsp. masa harina


  • Brown meat in skillet, drain fat
  • Place meat in heavy iron pot or dutch oven
  • Add onion, peppers, garlic, salt, paprika, cumin, chili powder, pepper, tomato sauce, water, and beer
  • Stir until well blended
  • Simmer 1-1 and 1/2 hours
  • About 1/2 hour before serving, mix masa iwth enough water to make paste and add to chili
