Pecan Smoked Pork loin with Blackberry BBQ Sauce

INGREDIENTS for Blackberry BBQ SAUCE

1 tsp mustard
1 cup brown sugar
1 cup Louisiana cane syrup
1/2 - 3/4 cup Blackberry jelly
Louisiana Hot sauce to taste
red wine to taste
1 cup fresh blackberries

PROCEDURE

  • In a mixing bowl, combine all ingredients and mix well.
  • Brush sauce over smoked pork loin

Pecan Smoked Pork Loin

3-5 lb pork loin

PROCEDURE: Season with All Season Salt and slow smoke until center on loin is 160 degrees.  Takes about 3-4 hours over pecan wood.
