4th of July Parfait from Blue Bell


2 cups fresh strawberries, washed, hulled, quartered
1 T. sugar
1 t. fresh lemon juice
1 cup fresh blueberries, washed and stemmed
4 scoops (approximately 1/4 - 1/2 cup each) Blue Bell Anniversary Cake Ice Cream
frozen whipped topping, thawed
mint leaves as garnish


  • In a small bowl, combine strawberries, sugar and lemon juice and mix well.
  • Stir occasionally until sugar is dissolved and syrup forms.
  • In 4 parfait glasses, add the following layers: 1/4 cup strawberries, 1 small scoop ice cream, 1/4 cup blueberries, 1 small scoop ice cream, and finish with 1/4 cup strawberries.
  • Add a dollop of whipped topping.  Garnish with mint leaves.
  • Makes 4 servings.
