4 quails
8 oz barley stuffing
salt to taste
pepper to taste
1/2 oz. olive oil


  • preheat oven to 350 degrees
  • season the quails with  olive oil, salt, and pepper
  • brown the quails on either side for a few seconds
  • stuff the quails with the barley stuffing
  • immediately place on a sheet pan
  • place in the preheated oven for 10 minutes
  • take out and reserve juice for a natural sauce
