Barley Stuffing


8 oz barley
3 cloves garlic
3 oz onion, finely diced
3 oz bell pepper, finely diced
1 qt. chicken stock
1/2 oz butter


  • preheat oven to 350 degrees
  • in a small saucepan melt butter and saute vegetable until tender
  • boil chicken stock, stir in barley with the vegetables
  • add the boiling chicken stock
  • place in a small baking dish and place in the oven for 18 to 25 minutes
  • take it out of the oven and fluff the mixture with a fork
