Panzanella “Italian Bread” Salad

2 Cups Italian Bread,  Toasted and Cubed
1 ½ Cups Grape Tomatoes, cut in half
1 Cup Roasted Eggplant
1 Cup Marinated Mushrooms
Marinated Fresh Water Mozzarella:  Diced


1 Cup Olive Oil
½ Cup Red Wine Vinegar
2 Tbs Italian Parsley, Chopped
2 Tbs Fresh Basil,  Chopped
Salt and Pepper to taste

Combine ingredients for Dressing in a Mixing Bowl.  Add remaining items and coat bread and vegetables. Serve and Enjoy!
