SALAD
2 lbs - Shrimp (16-20 per pound), Boiled and Sliced in ½
2 - Grape fruit, Peeled and Sectioned
2 - Oranges, Peeled and Sectioned
2 - Pears, Peel, Core, Slice
1 - Red Small Onion, Peel and Thinly Sliced
3 - Stalks Celery, Washed and Diced
Chopped Roasted Red Bell Peppers to taste
Salad Greens: Washed and Trimmed
DRESSING
1 Cup Vegetable Oil
1 Cup Vinegar, Cider
2 Tbs Sugar
1 tsp Celery Seed
Salt and Red Pepper to taste
In a large mixing bowl, combine all ingredients from the dressing, whip vigorously and set aside. In a separate mixing bowl, combine the cooked shrimp, citrus fruits, celery, pears, peppers and onions and coat with Dressing.
