Tuna Ahi

8 oz. Tuna Filet
1 cup Black and White Sesame Seeds
1 small bag Baby Spinach
1 teaspoon Chopped Garlic
1 cup Olive Oil

Soy sauce Reduction
Wasabi Aoli

Soy Reduction:
1 qt Soy Sauce
½ cup Sugar
¼ cup Worcestershire Sauce

Combine all ingredients in a sauce pan and reduce by half. This yields about ½ quart and keeps very well in the refrigerator.

Wasapi Aoli:
2 tablespoons Wasabi Paste
1 qt Heavy Cream
2 tablespoons of Olive Oil
2 tablespoons Vinegar

Cooking Directions:

  • Bread tuna in sesame seeds and sear rare in olive oil.
  • Sauté baby spinach in olive oil and garlic.
  • Put soy sauce reduction and baby spinach on plate
  • Very thinly slice tuna and layer on top of spinach and drizzle with Wasabi sauce.
