Oatmeal Raisin Cookies
Ingredients:
1 cup brown sugar
3/4 cup unsweetened applesauce
One egg white
2 tablespoons light olive oil
1 tablespoon vanilla
1 cup raisins
2 cups instant oats
1 cup sifted cake flour
1/2 cup whole-wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
Directions:
Whisk together sugar, applesauce, egg white, oil and vanilla in large bowl until smooth. Stir in raisins. In medium bowl, mix oats, cake flour, whole-wheat flour, baking soda, cinnamon and salt. Stir dry ingredients into wet ingredients with a wooden spoon. Mix until just blended. Drop by tablespoonfuls onto cookie sheet sprayed with nonstick spray.
