Chef Folse's Sweet Victory With A Cherry on Top

How Sweet it is! Celebrate the Tigers going to the Sugar Bowl with this super simple and delicious purple and gold dessert.

3 bags frozen whole sweet cherries
4 tbsps orange zest, divided
1/2 stick butter
4 tbsps sugar
1 cup orange juice
1/2 cup Grand Marnier
12 scoops Creole Cream Cheese gelato or vanilla ice cream

In a heavy-bottomed skillet, melt butter over medium heat. Add sugar and cook, stirring constantly, until mixture begins to caramelize around edges. Stir in two tbsps of orange zest. Add cherries and orange juice. Cook, stirring occasionally until cherries render juice and come to a bubble. Add Grand Marnier and continue cooking until cherry mixture is hot and bubbly. Adjust sweetness to taste, adding more sugar if too tart. Place two scoops of gelato in each of six dessert dishes. Divide cherry mixture equally between the bowls and garnish with remaining orange zest. Go Tigers!
