Charlotte Lafauci's Cornbread Dressing

4 c Cornbread Mix
2 eggs, slightly beaten
pinch of salt
1 c milk, added slowly
2 T oil
Mix all ingredients until smooth and liquid consistency.  Pour into very hot oiled baking pan, preferably cast iron skillet, bake 375 over 45 minutes, or until golden brown.

Dressing Ingredients
crumbled cornbread
2 c Italian bread crumbs
2 c minute rice, uncooked
1 small carton onion, bell pepper, celery, garlic Creole Mix (sauteed until clear)
6 boiled eggs, chopped
6 raw eggs
large can of chicken broth
2 cans Cream of Mushroom soup
Mix all ingredients well and put into hot oiled cast iron skillet, bake at  375 for 45 to 60 until golden brown.
