Charlotte Lafauci's Broccoli Quiche

2 unbaked pie shells
1/2 c grated cheddar cheese
1/2 c grated swiss cheese
1/2 lb pork sausage, cooked & drained
1-10 oz package frozen broccoli, chopped, and cooked
chopped mushrooms and onions to taste
1 1/2 c half and half milk
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon oregano
Tabasco, red pepper, and thyme to taste
Garlic, curry, paprika to taste
3 eggs, well beaten

Layer the cheeses, sausage, broccoli, mushrooms, and onions in the pie crust.  Mix half and half, salt, eggs, oregano, pepper, and other seasonings to taste in a bowl and pour over vegetables in crust.  Bake at 450 degrees for 10 minutes.  Then at 350 degrees for 30-40 minutes or until fairly congealed.  Let stand 10 minutes before cutting.  Can be made a day ahead and refrigerated.
