1/2 cup oil (1/4 cup bacon grease and 1/4 cup canola oil)
4 cups thinly sliced okra
Salt & Pepper to taste
Add grease and oil to skillet. Heat and add okra. Cook on medium high heat, stirring or turning often. The okra will soon lose its slime. Turn the fire to high and brown well. Drain the fried okra well on paper towels.
This is almost like a blackened vegetable. It becomes dry and crispy--and delicious!! You can pick it up and eat it like popcorn.
