Delicious Sweet Potatoes by Tonni McCollister

3-4 lbs. Louisiana Ymas
1 cup butter
2 eggs
2 tsp. vanilla
1 cup sugar (white)

1/2 cup butter
1 cup brown sugar
4 tsp. vanilla
1 cup Louisiana pecans

Peel and boil potatoes.  Mash with next 4 ingredients listed.  Place in a casserole dish (13x9).  Topping:  Melt butter, sugar, pecans, and vanilla until all combined.  Pour over mashed sweet potato mixture.  Bake for 1 hour at 350. 
A holiday "must have" at our house.
