Crab Mornay from Cafe By the River

1 1b Crab meat
1 stick of butter
2 tbs flour
1/2 cup chopped green onions
1/4 cup of fresh chopped parsley
1 pint of half and half
3/4 lb shredded Swiss cheese
salt, pepper, red pepper, 2 tbs of sherry cream


  • Saute butter and green onions.
  • Stir in flour for 1 to 2 minutes.
  • Wisk in half and half and cook until thick.
  • Add shredded Swiss cheese, let melt.
  • Add crabmeat, parsley, and sherry.
  • Season to taste with salt, pepper and red pepper.
