Sweet Potato Pie
2 cups mashed sweet potatoes (2 cans)
2 Tbls. butter, softened
2 eggs
1 cup sugar
1 Tbls. flour
1/2 tsp. salt
1/4 tsp. soda
1/2 cup buttermilk
1/4 tsp. allspice
1/2 tsp. cinnamon
1 tsp. vanilla
1 deep dish pie shell
Combine sweet potatoes, butter and eggs. Mix well.
Combine sugar, flour and salt. Stir into potato mixture.
Combine buttermilk and soda. Add to potato mixture.
Mix well. Stir in vanilla. Pour into pastry shell.
Bake at 350 degrees for 1 hour and 10 minutes.
Sweet Pie Crust
1 cup butter, softened
2 cups sugar
2 eggs
1 tsp. vanilla
1 tsp. cinnamon
1 pinch nutmeg
3 1/2 cups self-rising flour (plus some for rolling)
Beat butter at medium speed until creamy. Gradually add sugar, beating well. Add eggs, 1 at a time, beating well after each addition.
Add vanilla, nutmeg and cinnamon, blend well. Add flour, beating at low speed until blended well.
Wrap in plastic wrap and chill about 1 - 2 hours.
Divide dough in half and roll out on well floured board to fit a 9" pie plate.
Fill pie crust with filling.
Next, roll remaining dough and cut strips to fit on top of pie.
Bake at 350 degrees F for 25 - 35 minutes or until brown.
