Serves 4-6
INGREDIENTS
4 strips bacon, chopped
½ cup mushroom, sliced
8 eggs, cracked & whisked
½ tbsp. chopped parsley
½ tbsp. chopped green onion
Salt and pepper to taste
PROCEDURE
- In a non stick skillet, cook chopped bacon over medium heat until crispy.
- Add mushrooms and sauté' for 3 - 4 minutes.
- Add eggs, herbs, and season. Scramble until almost set,
- Place in 400 degree oven for 3- 4 minutes until firm.
- Serve on round platter, slice and enjoy hot, at room temperature or cold.
