Fiesta Corn Dip from Oak Lodge

Serves 6-8


1 bag frozen whole kernel corn
3/4 cup mayonnaise (fat free may be substituted)
1-2 Tbsp. chopped jalapeno peppers
1 bunch green onions - chopped
1 carton cherry or grape tomatoes - chopped
lemon pepper (generous amount, to taste)


  • Pour frozen corn into a mixing bowl, add remaining ingredients.
  • Stir until well mixed, cover and put in refrigerator to thaw corn.
  • This dip will stay several days in your refrigerator. Keep covered to prevent drying out.
  • Great with chips or crackers ... good for tailgating.
