Strawberry Salad and Potato Casserole from Cafe by the River

INGREDIENTS for Strawberry Salad

Chop 2-3 heads of lettuce 
add 1 pint strawberry's sliced
1 cup pecan halves
shredded monterey jack cheese

PROCEDURE: toss and add dressing

INGREDIENTS for Dressing:

1 cup oil
1/2 c red wine
tsp. minced garlic
1/2 tsp. salt    1/4 tsp pepper
2/3  cup sugar

INGREDIENTS and PROCEDURE for Potato Casserole

  • 5 lbs boiled potatoes
  • saute 1 cup green onions & 1/2 stick butter
  • add 1 can cream of mushroom
  • 1 lb Velveeta cheese- diced
  • red pepper to taste
  • 4 oz. sour cream
  • cook until melted
  • add cooked potatoes
  • mix well  pour into casserole dish and bake 15 min. @ 350
