Very Berry Spinach Salad by Oak Lodge Reception and Conference Center


9oz. Bag Spinach Leaves
1 1/2 cups berries (a mixture of strawberries, blueberries and raspberries or 1 1/2 cups of just one kind, or any combination)
1 cup toasted walnut pieces
4oz. Crumbled Gorgonzola Cheese

PROCEDURE: Combine the above and toss with the following dressing.

INGREDIENTS for dressing

2 1/4 tbsp. sugar
4 1/2 tbsp. raspberry vinegar
3 tbsp. olive oil
3 tbsp. vegetable oil
Salt and pepper to taste

PROCEDURE for dressing

  • Combine sugar and raspberry vinegar.  Heat in microwave just until sugar is dissolved.
  • Slowly whisk in the oils.  Add salt and pepper to tast.
  • Serves 6 to 8.
