Gorgonzola Onions from The Steakhouse at Casino Rouge

Salted Butter     4 oz.
Slivered Yellow Onions    3 lbs.
Rough Chopped Shaved Ham  12 oz.
Heavy Cream    1 quart 
Green Onions Bias Cut  1/2 cup
Minced Rosemary   8 tsp.
Gorgonzola Cheese Crumbles  2 cups


  • Place the butter into a brazier pan over medium heat. Add the onions and ham and cook, stirring occasionally, until the onions are lightly caramelized, approximately 8-10 minutes.
  • Add the cream, rosemary, and green onions and bring the mixture to a boil. Reduce the heat and allow to simmer for 5 minutes. Remove from the heat and stir in the gorgonzola. Serves 20.
