Shirley Sibley's Glazed Pecan Clubs

Servings:  48-50 Crackers

These crispy little hors d'oeuvres are not only delicious, but very simple to make. The buttery crunch of the crackers contrasts with the sugary pecans for a winning combination that would be especially delicious served with a cheese tray.

½ cup plus 2 tbsp chopped pecans
1 box Club style Crackers
¼ pound butter
½ cup plus 2 tbsps sugar
¾ tsp vanilla

Preheat oven to 325ºF. On a large baking or cookie sheet arrange crackers in straight lines touching one another. In a small heavy-bottom saucepan over medium-high heat, bring butter, vanilla, and sugar to a boil, stirring constantly. Add pecans and reduce heat to medium-low. Continue to boil 1-2 minutes. Remove from heat and spoon hot mixture evenly over crackers making sure all are completely coated. Bake 12-15 minutes. Remove from oven and with a lightly buttered spatula carefully remove crackers and place on serving tray. Once cooled crackers will be easy to separate.
NOTE:  If crackers cool down before all are removed from baking sheet, simply return to oven for a few seconds.
