Algie Petrere's Wonton Sausage Appetizers

These simple, but visually appealing appetizers are also extremely tasty. This version uses sausage and cheese, but really the possibilities are endless. Try them with a ground meat or a shrimp filling, too.



1 package wonton wrappers

1 pound Cajun or Italian sausage removed from casings

2 tbsps butter

¼ cup minced red bell pepper

¼ cup minced green bell pepper

¼ cup minced garlic

1½ cup cheddar cheese, shredded

1 cup pepper jack cheese, shredded

¾ cup ranch dressing



Preheat oven to 350º F. Melt butter in a large sauté pan. Sauté bell peppers and garlic 2-3 minutes. Add sausage and cook until golden brown, stirring constantly. Drain well and allow to cool 10-15 minutes. Press a wonton wrapper into each hollow of a miniature muffin pan. In a large bowl, mix sausage mixture with cheeses and dressing until well blended. Spoon mixture into wonton cups, about a tablespoon per cup. Bake 15 minutes or until bubbly
