Serves 4
INGREDIENTS
4 cups water
3/4 teaspoon salt
1 cup organic wheat berries (hard winter wheat)
2 TB walnuts, toasted and chopped
1 organic Macintosh or Gala apple
1 organic Granny Smith apple
1 celery rib, sliced thin
2/3 cup packed, fresh mint leaves, cleaned and chopped
1/2 cup dried cherries
1/4 cup golden raisins
2 green onions, chopped
3 TB rice wine vinegar
3 TB fresh orange juice
3/4 teaspoon freshly grated orange zest
8 butter lettuce leaves
PROCEDURE
- In a saucepan, bring water and salt to boil and add wheat berries.
- Cover, reduce heat and simmer for 1 and 1/2 hours or until tender.
- Drain wheat berries in a colander and cool to room temperature.
- Cut apples into 1/2" chunks and toss with wheat berries in a large bowl.
- Add all remaining ingredients except lettuce and toss together.
- Season with salt and pepper and serve on lettuce leaves.
