Cafe by the River's Crawfish Stuffed Chicken Breasts

6-8 boneless skinless chicken breasts, seasoned w/ Tony's
1/2 stick of butter
1/2 cup seasoning blend
1 Lb crawfish tails, ground
1 egg
1/4 cup bread crumbs
6-8 slices of bacon

Saute butter, seasoning blend and most of the crawfish tails. Cool and add egg and breadcrumbs to crawfish mixture and season with Tony's. Stuff chicken and wrap with bacon. Bake in 450 degree oven for 45 minutes uncovered.

Crawfish Sauce:
1/2 stick butter
2 Tbl flour
1 pt half & half
1/2 cup green onions
1/4 cup parsley
2 tsp Sherry
Seasoning to taste

Saute butter anf flour. Add remaining crawfish to mixture and cook an additional minute. Add half & half, green onions, parsley, sherry and seasoning. Cook on low heat for 35 minutes.
