Fresh LA jumbo Soft Shell Crab 1 cup prepared rice 1 side vegetable of choice 1 cup au gratin sauce with fresh LA crawfish tails
INGREDIENTS for Au Gratin Sauce (serves 2) 2 cups heavy whipping cream 1 tsp thyme 1 tsp basil 1/4 tsp Cayenne 1/4 tsp white pepper 1/4 tsp salt 2 oz. cheese (Swiss cheese preferred, but can use any cheese) 2 oz. fresh LA crawfish tails
Combine heavy whipping cream and all spices in a suitable skillet, reduce by half. Add cheese and LA crawfish; continue to cook until thich.
Place rice on plate, top with fried LA jumbo soft shell crab
