Brown Butter Banana Skillet Cake with Strawberries and Pecans

Ingredients:

½ cup unsalted butter

2 small ripe bananas, mashed

1 cup sliced strawberries

½ cup chopped pecans

1 cup brown sugar

1 tsp vanilla extract

1 large egg

½ tsp ground cinnamon

½ tsp ground nutmeg

2 cups flour

1 tsp baking soda

½ tsp salt

8–10 scoops vanilla ice cream, for serving

powdered sugar, for serving

Method:

Preheat oven to 350°F. Melt butter in a 9-inch cast iron skillet over medium-high heat. Stir in sugar and vanilla and remove from heat. Whisk until thoroughly combined. Allow mixture to cool about 5 minutes. Add the egg and whisk together until smooth. NOTE: You may want to place all ingredients in a bowl of an electric mixer, then place into baking dish. The mixture will then be glossy, add banana, cinnamon, nutmeg and stir to combine. Add the flour, baking soda and salt. Stir carefully until all of the dry ingredients are incorporated. Fold in pecans then spread evenly across the pan and place sliced strawberries on top. Place in oven and bake 18–25 minutes until mixture is set. Remove from oven and allow to cool for 15 minutes. Serve warm with a scoop of ice cream and powdered sugar.
