1 box of yellow cake mix 1 cup fat free Egg Beaters 1/2 cup apple sauce 1 (11 oz.) can mandarin oranges and juice
Icing: 8 oz. light Cool Whip 1 lg can crushed pineapple in own juice 1 (1 1/2 oz.) box sugar free instant pudding mix
Combine cake ingredients. Mix 2-3 minutes or until well blended. Pour into 2 round 9" cake pans. Bake at 350 degrees for 18-20 minutes. Prepare icing by combining dry pudding and pineapple, including juice. Fold in Cool Whip and spread onto cooled cake. Refrigerate after icing.
