Green Bean and Vidalia Onion Salad

Stirrin' It Up: Green Bean and Vidalia Onion Salad (Feb. 11)

The Georgia-grown Vidalia onion is known for its sweet, mild flavor. This onion has acquired a reputation as the world's sweetest onion. Vidalia onions complement the flavor of green beans superbly in this relatively simple recipe.


2 (10-ounce) packages frozen cut green beans

½ cup sliced Vidalia onions

1 tbsp sugar

½ cup olive oil

3 tbsps white balsamic vinegar

¼ tsp dried mustard

½ tsp chopped thyme

½ tsp chopped mint

¼ tsp salt

cayenne pepper to taste

4 slices cooked bacon, crumbled

1 cup shredded Swiss cheese

½ cup yellow grape tomatoes, halved

½ cup red grape tomatoes, halved


Cook green beans according to package directions, drain and chill. Place onions in a small bowl and top with sugar. Cover and chill. In a pint jar, combine oil, vinegar, mustard, thyme, mint, salt and cayenne pepper. Seal and shake vigorously. To serve, toss beans, onions, bacon, cheese and tomatoes in a large bowl. Shake salad dressing again and pour over salad. Toss well and serve.
