Peanut Brittle

Stirrin' It Up: Peanut Brittle (February 9)

One can find peanut brittle at the entrance of most grocery stores, especially during the holiday season. But this sweet snack is easy to create, and this is the perfect recipe.


1 cup peanuts

1 cup granulated sugar

½ cup light corn syrup

¼ tsp salt

¼ cup water

2 tbsps butter, softened

1 tsp baking soda


Grease a large cookie sheet and set aside. In a 2-quart, heavy-bottomed saucepan, bring sugar, corn syrup, salt and water to a boil over medium heat, stirring constantly until sugar is dissolved. Add peanuts. Set a candy thermometer in place and continue cooking, stirring often until temperature reaches 300°F or until a small amount of mixture dropped into very cold water separates into hard and brittle threads. Remove from heat then immediately stir in softened butter and baking soda. Carefully pour onto prepared cookie sheet as soon as butter and baking soda have been fully incorporated, set aside and allow to cool. Once fully cooled, break candy into pieces.
