1 pound breakfast sausage

1 package Pioneer® Country Gravy Mix

buttery cooking spray

¼ cup minced onion

¼ cup minced celery

¼ cup minced red bell pepper

¼ cup minced garlic

¼ cup thinly sliced green onions

¼ cup chopped parsley

6 eggs

1 cup water

½ cup milk

1 cup shredded cheddar cheese

7 slices white bread, crust removed and cut into (1-inch) cubes

pinch paprika


Preheat oven to 325°F. Lightly grease a 9" x 13" baking dish with buttery cooking spray and set aside. In a large skillet over medium-high heat, sauté sausage until golden brown, stirring often. Add onion, celery, bell pepper and minced garlic, then sauté 3–5 minutes or until vegetables are wilted. Drain mixture and set aside. In a small mixing bowl, lightly beat eggs and set aside. In a large bowl, whisk together water, milk and country gravy mix until well combined. Gently fold eggs into gravy mixture. Set aside. Into the prepared baking dish, evenly place sausage mixture, green onions, and parsley. Layer cheese evenly over sausage mixture then pour egg mixture over cheese. Top with bread cubes, allowing the bread to remain half submerged and half dry. Spray bread lightly with buttery cooking spray then sprinkle with paprika. Bake, uncovered, 40–45 minutes. Remove from oven and let stand 5–8 minutes before serving.
